Tofu Skin Rolls with Ground Pork

The ingredients needed in the Sanxian Soup

Ingredients:
2 sheets of tofu skin (bean curd skin)
250g ground pork
1 egg white
3 water chestnuts, finely chopped
1 small piece of ginger, minced
2-3 green onions, finely chopped (reserve some for garnish)
Seasoning for the filling:
1 tablespoon oyster sauce
Salt to taste
2 teaspoons soy sauce
2-3 tablespoons cooking wine
A pinch of sugar
A small amount of oil
Instructions:
Prepare the Ingredients:
Soak the tofu skin in water until softened.
Finely chop the water chestnuts.
Mince the ginger and chop the green onions. Reserve a small amount of chopped green onion for garnish.
Mix the ground pork, ginger, green onions, egg white, and chopped water chestnuts together.
Season the Filling:
Add salt, soy sauce, oyster sauce, cooking wine, sugar, and oil to the ground pork mixture.
Stir the mixture in one direction with chopsticks until it becomes sticky and well combined.
Assemble the Rolls:
Lay one softened tofu skin flat on a clean surface.
Spread a layer of the pork filling evenly over the tofu skin.
Starting from one end, gently roll the tofu skin tightly, like a spring roll.
After rolling, pinch the ends and press the middle lightly to ensure there are no air pockets.
Repeat the process with the remaining tofu skin and filling.
Pan-fry the Rolls:
Heat a non-stick pan over medium heat and add a small amount of oil.
Place the tofu skin rolls in the pan and fry until all sides are golden brown.
Remove the rolls and set aside.
Slice the tofu skin rolls into bite-sized pieces.
